Cafe Colette (79 Berry Street) starts off the summer by welcoming new executive chef Charles Brassard, formerly of August and Little Giant, whose thoughtful approach to new American cuisine is reflected in his approachable yet creative menu and use of seasonal ingredients. Located on a cozy corner in Williamsburg, this restaurant features 38 interior seats with 38 new outdoor seats - a combination of the side café and just-added, year-round garden dining room. While his menu is rooted in American cuisine, Chef Brassard's childhood was spent living around the world, from Paris to Puerto Rico, and international influences come through in some of his dishes. Additionally, creative and local sourcing are a focus, with daily bike-rides to The Meat Hook and regular outings to the McCarren Park farmer's market and others. New appetizers on the menu include Crispy Artichokes with Fried Lemon and Parmesan Aioli; Grilled Asparagus with Poached Egg, Crispy Pork Belly, and Pistachio Vinaigrette; and Octopus Salad with Charred Spring Onions, Piquillo Peppers, Almonds, Preserved Lemon and Sherry Vinegar.
